Crockpot White Chicken Chili

Last week I made THIS!
Here is the recipe.....

White Chicken Chili!
I added to a store bought box mix and did it in the 'ol crocker.

Just buy all of this. 
(and monterey jack cheese, sour cream if it is to your liking)
I do it the easy schmeasy way so my onion and peppers are pre diced and my chicken are frozen tenderloins.  The box mix is called Carrol Shelby's White Chicken Chili Kit (bought it at Publix grocery store)

Put in the Crockpot:
-1 cup of water
-the box mix of spices and flavorings
-1 can of diced tomatoes
-1 can of white beans
-2 lbs of frozen chicken 
-handful of diced onion
-handful of diced peppers

I cooked on low for 9 hours (put it in at 9:30am)
Stir it and the chicken will shred,
 let it cool and it will thicken.

I put blue tortilla chips in the bottom of the bowl, then the chili, and then a heaping helping of monterey jack cheese!  Next time I will add a dollop of sour cream!  

It was the perfect amount of spicy and yummy!
BIG hit with the hubs and great for heated leftovers!

Made this for St. John this morning (he isn't trying to lose weight, just hates breakfast)
He couldn't believe it was 'healthy' LOL
I snagged a sip (I had banana coconut this am) and it was DELISH.

  5. Thanks for posting about Brewer. With having a Hypoplastic Right Heart kiddo I'm always glad to be able to "meet" other heart moms. I've been in their shoes and know what they are going through right now. I'll have to go check out their blog and say "hello".

  6. Looks so delicious, Shelli! I will keep baby Brewer and his family in my thoughts and prayers. I just popped over and saw a photo of him and read some of their story. What a precious baby and a sweet family. My heart goes out to them.
