Salsa Roast Tacos- EASIEST Crock pot Recipe Yet!

Thank you for all of the sweet comments from my LEAST fun post to write so far, HA.  Of course I can count on my blog readers to encourage and inspire, you guys are the best!

Since I still am on a quest to cook for my family, 
I am sharing with you, 


They are so good, I barely got a 'mini' taco!
HUGE hit with my parents, husband and even little K!

All you need is a sirloin tip roast, salsa, tortillas, sour cream and shredded cheese (add taco toppings to taste)

Here is a close up of the meat.  I went small because we are a small family!

Put the roast in the crockpot, dump the jar of salsa on top.  Set on high for 5 hours!
The roast shreds and is so moist (that word makes me cringe)!

I cut a little pie corner of a tortilla and then loaded mine up with the roast (it shreds in the crockpot) and sour cream and cheese! YUM!

I served some of these yummies as a garnish to the plate, my husband and I are obsessed with everything they make.  Food SHOULD taste good, right?  

Needless to say, there were no leftovers.  Good sign, right?


  1. This looks really good - I love using my crockpot...I don't enjoy cooking that much, but I am really trying to do it more and the crockpot is a life saver!

  2. I do the Vi shakes too. Let me give you a, don't walk to your nearest health food store and get some PB2. It is basically peanut butter that has had all of the oils pressed out of it. I think 2 tbsps. has like 45 calories and very low fat (can't remember). Add that to a shake with almond milk and frozen banana...yum!!!

  3. Thanks for your honesty on your last post!! It sucks getting your body back after having kids! I have 4 and have lost 60 pounds..4 times. Kill me!! Good luck on your journey! Btw..try to love your new body!! Babies do a number on them!!

  7. Yum. And um, what the hell is that bag in your crockpot and why don't I know about these? Looks to make cleanup a cinch.

  8. I do this with chicken breasts..never thought to try it with red meat. Sounds great!! Also good luck on your journey!!

  9. Looks delicious! I could go for this now. I didn't know about those bags either! Much easier clean up.

  10. Try not to use the plastic liners in the crock pot. It is not good to cook in plastic, too many chemicals. Go easy on the shakes as meal replacements. You need to change your thinking to "eat to live". Your food can be really great fuel for your body not just stuff to put in your mouth. YOu can do it! Love your blog. You have great style!

  11. This look so good! K I need a crock pot... I am OBSESSED with everything Food Should Taste Good makes, too! I buy like five bags of their chips every time I am in Whole Foods.

  13. Oh my goodness! I realize you posted this so long ago but I just made it for the first time last week and my husband thinks he's died and gone to heaven. He claims its the best thing I've ever made. And I may just have to agree- especially since they are so easy!! Thanks for the recipe :)
