I'm Shaylynn from Oxford Impressions and Shelli has invited me to share a couple of recipes with ya'll.
Two of my favorite topics to blog about are my sewing projects and what I make in my kitchen. So when two of my recipes caught Shelli's attention I was thrilled to hear about it! Those two recipes are Pizza Casserole and Lasagna Without The Pasta! Pizza Casseroles are great because you can adapt them to whatever your family likes on their pizza. Sometimes I will have three casserole dishes set out on the counter so I can customize to every one's liking! If your kids only like pepperoni pizza, then make your casserole with the lasagna noodles, the cheese, the sauce and the peperoni's. It's a win win situation for all.
Ingredients are as follows:
Boil one package of lasagna noodles. Saute the onions, peppers and mushrooms in a skillet, add the hamburger, let it brown and drain. Add the garlic powder, black olives and the Ragu.
Layer as follows:
Mixture of hamburger, onions, peppers and Ragu
and top with the Pepperoni......
Bake at 350 degrees for 30 minutes and eat it up !
Pepperoni tip I learned from my mother-in-law: If you don't like the oil associated with the peperoni's you can soak them in water then pat dry before adding to your recipe.
The second recipe Shelli has asked me to share is for a lasagna that has no pasta. This is a great way to get in lots of veggies and cut out all those pesky carbs that are attached to the lasagna noodles! For this recipe you use whatever vegetables you like. I love all recipes that are of Mexican flavor so I add jalapenos, onions and poblano peppers to whatever I can. You may not be such a big fan of these three ingredients and choose to omit them. No worries, this dish taste great either way.Today I tried a recipe for lasagna without the pasta. I found it here and then changed it up some to suit me. Ingredients I used are as follows:
Basil and oregano
Bake for 30 minutes at 350 degrees
Saute the onions, jalapenos and garlic in olive oil, add the ground turkey and brown. I add my spices at this point to the meat mixture or you can add the spices into the ricotta cheese. While the turkey is browning in the skillet, add fresh spinach to boiling water long enough for it to wilt. Remove and drain spinach.
Add the can of crushed tomatoes to the ground turkey mixture. Saute the mushrooms and peppers in olive oil. Then you are ready to start layering in a casserole dish.
Spread 1/2 of the meat mixture in casserole dish. Add all the wilted spinach and top with the poblano peppers and mushrooms.....
Next....add a layer of grated Parmesan.....
then the remainder of the meat mixture and top with as much mozzarella cheese as you like....
Bake in 350 oven for 30 minutes and then it will look like this......
Totally delicious and I hardly noticed there was no pasta. Yay for less carbs!
